    Since 2015 started I have had a pile of books next to my bed ready to be¬†flipped through. My lack of spare time lately has made it difficult to really get into any of them,¬†but with a few¬†upcoming¬†work trips I will have the time to actually spend reading them.   • The Skinny Taste Cookbook: Enchiladas

    Skinny Taste is a much larger cookbook than I expected. Who knew you could make hundreds of delicious meals, yet keep it healthy? At first I was overwhelmed by the number of recipes, how was I supposed to pick just one? I waited for a night when I had a few hours to prepare dinner, thumbed through the cookbook and found a perfect recipe for enchiladas. I love Mexican food but it is so high in calories and carbs that I don’t eat it very often. After making these enchiladas, I know they will become a monthly meal.     Now that I am finished reading The Fault in our Stars, I need some more books to read for the next month while I am traveling for work. So please send any recommendations my way!
